How long does freshly pressed homemade juice last? Refrigeration, oxidation and freezing: what really affects fresh juice without additives.

You squeeze your oranges in the morning. In the evening, the juice has already darkened. Two days later, it smells sour and you throw it away, a little guilty. Did you miss something? No. Cold-pressed juice, without preservatives or processes, deteriorates quickly. This is normal, and it’s even a good sign.

Between extractor sellers and cure brands, we read everything and its opposite: 12 hours for some, 72 hours for others, a week for the most optimistic. Here is the real duration, with scientific figures to back it up, how to make the most of the few days you have available, and why a juice that lasts for weeks has necessarily undergone an industrial process.

Cold-pressed juice without additives can be kept for 2 to 5 days in the refrigerator for acidic citrus fruits, and only 24 to 48 hours for green vegetable juices. Its fragility is not a defect: it is proof that it contains neither preservatives nor industrial processes. To keep it best: an opaque glass container, filled to the brim, in the cold, away from light.


How long does homemade fruit juice last?

Short answer: 2 to 5 days in the refrigerator for citrus juice, 24 to 48 hours for green vegetable juice, and just 2 to 4 hours at room temperature. The difference is not random. It depends on pH.

Citrus fruits are acidic. An orange is around pH 3.5 to 4.2, a lemon goes down to 2 or 2.5. Below pH 4.6, most pathogenic bacteria do not grow. Your citrus fruits therefore protect themselves for a while. Green vegetable juices have a pH close to neutral (5.5 to 6.2) and a microbial load that is already high at the time of pressing. A study by Guo and colleagues (2026) measured 7.57 to 7.71 Log CFU/mL of bacteria from day zero in unprocessed kale and chard juices. In other words: the race is on before you even put the bottle away.

A word of honesty about these figures. A study by Kaddumukasa (2017) recommends only 1 to 2 days, but it focused on juices produced in insufficient hygienic conditions, already substandard from pressing. In a clean workshop, on washed and cold fruits, citrus fruits last comfortably for up to 5 days. The lesson: the actual duration depends as much on hygiene during pressing as on the fridge. For maximum safety, aim for 24 to 48 hours and don't go looking for the fifth day. Hygiene weighs heavily: a poorly washed fruit, a poorly rinsed extractor, dirty hands, and the juice leaves a long time late, whatever your fridge.

And the story of “juice in the extractor which lasts 72 hours, compared to 2 hours in the centrifuge”? Take with a pinch of salt. No serious study validates this precise figure, especially when it is repeated by those who sell extractors. The type of machine plays a role, but a modest one: a centrifuge spins quickly and incorporates more air, therefore oxidizes a little more at the time of pressing. Once the bottle is in the refrigerator, it is the storage that decides (the cold, the container, the light), not the brand of your appliance.

Why does fresh juice go bad so quickly?

Two phenomena are attacking your juice at the same time, and they have nothing to do with each other. On the one hand, oxidation, a chemical reaction. On the other, micro-organisms, which multiply.

Oxidation first attacks vitamin C. Upon contact with oxygen and light, ascorbic acid is transformed, with no possible return. The loss follows what chemists call order 1 kinetics: rapid at first, then slower. How long, concretely? A study by Nakilcioglu-Taş and Ötleş (2020) measured the half-life of vitamin C in fresh orange juice: between 6 and 17 hours depending on conditions. Not 15 minutes. Hours.

A common misconception to leave behind: “Drink your juice within 15 minutes or it is dead.” This is false. In a sealed container kept cold, vitamin C losses after 15 minutes are negligible. The “15-minute” claim circulates widely without supporting evidence. Likewise, the idea that vitamin C levels in juice could rise again on the third day is impossible: oxidation does not reverse itself.

Counterintuitive detail, and this is where most advice goes wrong. In the first hours, light and oxygen matter more than temperature for vitamin C. The authors of the 2020 study verified this: between 4°C and 25°C, over four hours, the temperature difference changed almost nothing. What changes everything is light and air. An opaque, full, closed glass protects your vitamin C better than simply putting it in the cold.

The second front is browning. This darkening color comes from an enzyme, polyphenoloxidase, which oxidizes polyphenols as soon as it encounters oxygen. It is she who blackens a cut apple. In your juice, it’s the same mechanism. Visible, natural, and impossible to hide without additives.

Store your juice well, without cheating

No trick works wonders. But a few simple actions extend the deadline by a day or two and preserve the taste. Here is the method.

The container first. Glass, not plastic: plastic can release compounds into a cold, acidic liquid. Choose it opaque, or store the bottle away from light. Fill to the brim to expel air. The less oxygen left in contact with the juice, the better.

The cold, quickly. Head to the refrigerator immediately after pressing, at less than 4°C. Do not leave the bottle lying on the work surface. The cold does not stop the micro-organisms, it slows them down, which is enough for a few days.

Lemon, with measure. A few drops of lemon juice really helps, and for a specific reason. The vitamin C in lemon acts as a shield: it reacts with oxygen instead of other compounds, sacrificing itself. Citric acid further lowers the pH. The mechanism is real and documented (Cao and colleagues, 2021). On the other hand, the famous “gain of 1 to 2 days” has never been quantified by a serious study. See it as a helping hand, not a solution. The lemon has also many other advantages deciphered by science.

Pour the juice into the tray, freeze, then store the ice cubes in a bag. Freezing stops micro-organisms dead. Be careful though: it is not neutral in terms of nutrition. How do you know if pressed juice is expired?

Your juice signals this to you. And he does it precisely because there is no additive to mask his age. Four signs are unmistakable:

  • Color turns dark brown.
  • L’odeur becomes sour, sometimes alcoholic.
  • The taste moves towards the fermented, the spicy.
  • The texture foams, fizzes, or forms bubbles.

These signs come from fermentation: the yeasts transform the sugars, the pH drops, the acidity increases. It’s visible, and it’s rather reassuring: nature speaks clearly. An industrial juice would not give you these alerts as clearly.

Let's be serious about the risk. Unpasteurized juice can harbor bacteria like E. coli or salmonella, especially when the summer heat speeds things up. At the slightest doubt, we don't taste it, we throw it away. Raw juices are also not recommended for young children, pregnant women, the elderly and immunocompromised people.

Fresh or industrial: why commercial juices last for weeks

This is the disturbing question. If your homemade juice lasts in three days and the supermarket juice lasts for a month, it's neither magical nor suspicious. It's technique. And this technique has a cost.

Thermal pasteurization heats the juice, often around 90°C. In terms of security, it’s unstoppable. Nutrition-wise, it leaves its mark. A study by Vieira (2018) on orange juice measured, just after pasteurization, an antioxidant activity down by 26% and flavonoids down by 22%. Please note: we are talking about partial losses, not total destruction. The idea that pasteurization “destroys everything” is a shortcut. It degrades some of the heat-sensitive compounds, that’s all, but it’s not nothing.

High pressure (HPP) is more subtle. The juice is subjected to enormous pressure, 400 to 600 MPa, without heat. The membranes of the bacteria give way, the vitamins hold up better. The same 2018 study showed twice as long-lasting antioxidant activity as with thermal pasteurization. In terms of taste, tasters are not mistaken either: in a study by Hu (2020), a juice passed under high pressure obtained a sensory score of 6 to 6.6 out of 9, compared to only 3.9 for the same juice pasteurized with heat, judged to be more bitter. Attractive, but to be qualified on three points. First, the actual duration is around 21 to 60 days for juices, not the “150 days” that we sometimes read. Then, HPP does not destroy bacterial spores, as the EFSA recalled in 2022. Finally, a juice at 600 MPa remains a processed juice, and it must remain in the fresh section. This is not “simple cold pressing”.
